Types of Shrimp

Seven-Barbed Shrimp: Small, flavorful, and excellent for fillings and sauces.

Pink Shrimp: Large, with a sweeter taste and meaty texture. Perfect to be the star of your dish!

Gray Shrimp: Smaller than the pink shrimp, versatile, and suitable for various dishes.

How to Choose Shrimp

The head and tail should not be loose from the body.

The shell should be firm and shiny.

There should be no dark or yellowish spots on the body.

How to Clean Shrimp

Start by removing the shrimp's head and rinse it under running water.

Remove the shell, legs, and tail.

To remove the vein on top, use a toothpick: insert it into the fold of the shrimp and pull it out.

Do the same for the vein on the underside.

Rinse again under running water.

How to Make Shrimp Broth

Use the shrimp heads and shells: place them in a pot.

Add onion, carrot, leek, and garlic.

Pour water to cover all ingredients.

Add fresh herbs of your choice and let it simmer for 40 minutes on low heat.

Strain the broth and use it to make risotto and other dishes. You can also freeze the broth for later use.
