Ingredients
Filling:
- Olive oil to taste
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 tomatoes, chopped
- 1 kilogram (2.2 lbs) cooked and shredded chicken breast
- Salt to taste
- 1 can of corn
- 1 can of cream
Dough:
- 3 eggs
- 3 cups of milk
- 1 cup of oil
- 1 chicken bouillon cube
- 1 teaspoon of salt
- 3 cups of all-purpose flour
- 1 tablespoon of baking powder
- 330 grams (11.6 oz) of mozzarella cheese
Instructions
Filling:
- In a pan with olive oil, sauté the onion, garlic, and tomatoes. Add the chicken breast, season with salt, and mix well.
- Add the corn and cream, mix, and set aside.
Dough:
- In a blender, blend the eggs, milk, oil, chicken bouillon cube, salt, flour, and baking powder until smooth.
- Pour half of the batter into a springform pan, cover with the filling, and add the mozzarella cheese. Cover with the remaining batter.
- Bake in a preheated oven at 180°C (350°F) for about 30 minutes.
