Ingredients
Perfect Egg Sandwich
- 2 eggs
- 2 slices of toasted whole-grain bread
- 4 slices (100 grams) of cooked ham
- 6 slices (80 grams) of meia-cura cheese (a Brazilian semi-cured cheese)
- Salt to taste
- Chopped chives to taste
- Homemade mayonnaise to taste
Homemade Mayonnaise
- 1 raw egg
- 1 teaspoon of mustard
- 2 teaspoons of apple cider vinegar
- 1 tablespoon of oil
- 1 tablespoon of water
- 1 tablespoon of lemon juice
- Salt and black pepper to taste
- 1 cup (250 milliliters) of oil
Instructions
Perfect Egg Sandwich
Cook the Eggs: Place the eggs in a pot with boiling water and cook for 5 minutes. Remove from the boiling water and place in cold water (or with ice). Let cool for 1 minute, peel carefully, and set aside.
Prepare the Sandwich: On a plate, place a slice of toasted whole-grain bread, 2 slices of cooked ham, and 3 slices of meia-cura cheese. Use a kitchen torch to melt and brown the cheese slightly.
Assemble: Use the back of a spoon to press the center of the bread to create a "well" and place the boiled egg in it. Season with salt to taste, sprinkle with chopped chives, and serve with homemade mayonnaise.
Homemade Mayonnaise
Blend: In a blender, combine the raw egg, mustard, vinegar, oil, water, lemon juice, salt, and black pepper. Blend for 30 seconds.
Add Oil: With the blender running, slowly add the oil in a steady stream until you achieve the desired mayonnaise consistency.
